Okay, so I’m going to share something I just have to share – the best pancake recipe ever! Maybe not EVER, but they’re really good. Trust me! And they’re healthy and quick!!
My child is either the two year old that will inhale more food than I can in one sitting or she won’t touch anything I put in front of her, but these pancakes always work!
They’re super healthy and super easy. I originally found the recipe on Pinterest but I tweaked it to my liking by adding oats and spinach.
It’s beyond simple. You do need a blender or food processor, but other than that and a pan to cook them in, that’s it!
Ingredients:
1 ripe banana
1 egg
Small handful of spinach
Half a cup of oats
Cinnamon (more the merrier, I say)
Spray/butter for the pan (or I use coconut oil)
Okay, here we go.
I use a small $15 Hamilton Beach single serve blender, no fancy BlendTec or Vitamix here! But I did have a MagicBullet, I loved it, until it broke on me after three weeks. 🙁 So I went back to this bad boy. I had one of these for three years, worked perfectly, I only bought a new one because I cracked it and it started to leak! Anyways, back to the recipe.
First, blend together the banana and egg. One it’s smooth and blended you can add your oats, spinach and lot’s of cinnamon. A good tablespoon, at least.
Get your pan or whatever you’re cooking on warm and ready, use some non stick spray, or whatever you prefer to use, and you’re good to go! Pour some batter on to the pan and cook until done.
Super easy, quick, and healthy. Perfect for sneaking some greens to the little ones! I make a good size batch of these and pop them in the freezer, that way I have them already made and all I have to do is heat them up. Easyyyy.
